Answer
The establishment believes that Biden or Bloomberg is more electable than Sanders. Bloomberg's road map to the nomination is similar to Hillary's (He let it slip in the S.C. debate; not too many people caught it).

Hillary had the bulk of the 2016 super delegates committed to her as a plan B, just in case she would need them. If Bernie had gotten traction a little earlier in the primary cycle, Hillary would have needed them.

Super delegates are Democrat members of congress, state party officials etc. When Hillary resigned as Secretary of State in 2012 (?) she went on a money raising marathon. What she did with that money was to finance small state and local democrats in their elections; there her money goes a lot further at the local level. A lot of people believe that she was covertly buying super delegate support.

In the S.C. debate. One hour, thirty four minutes into the debate, the question of how a Sanders nomination would affect a loss of majority in the House of Reps. Bloomberg, not realizing the impact of what he was to say, said that he'd dumped 100 million dollars into funding house races (Every Dem House of Reps. member is a super delegate). Then.... he let it slip he said "I bought/got them. He bought them! He's buying super delegates. (1 hour, 34 minutes youtube)

To answer your question, I do believe that the Democrat elite see Sanders as a 100% failed candidate in a general election. Biden is falling apart; Bloomberg...? I think they're just not sold on him yet.

Not sure yet that Biden has fallen apart. Today we will see how Biden does in South Carolina. But buying super delegates seems to be a smart thing to do, especially if you have the money and Bloomberg is both.
