I have read that it is legal in FL to open carry while hunting, fishing, camping...or driving to a lawful shooting range. I am curious about hiking around black water? Any ideas? Actual legal proof?

I'm gonna answer your question by asking you more questions.

Are you hunting, fishing, camping, or on your way to or from those activities when you're hiking around BW?
Do you have a tent or RV at a camp ground in BW when you are hiking around?

    See section 512:

(Sec. 512) Prohibits the Secretary of the Interior from promulgating or enforcing any regulation that prohibits an individual from possessing a firearm, including an assembled or functional firearm, in any unit of the National Park System (NPS) or the National Wildlife Refuge System (NWRS) if: (1) the individual is not otherwise prohibited by law from possessing the firearm; and (2) the possession of the firearm complies with the law of the state in which the NPS or NWRS unit is located.

Yes, camping (would have equipment) hiking, at least a backpack. And I am a ccw holder if that helps.
If I were actively camping at the camp ground then I would be carrying. If I were just out for a hike coming from the house then it wouldn't fall under the permissible OC statutes as it is written.
