    Base commissary gets these in about once a year, usually in summer time. Luckily scored some last trip there. Best outside a restaurant we can find locally, only wish we could get them more often as we both love them.

    Yes we buy the pork ones and chicken as well whenever we see them! Edited to add Grocery Outlet in Pace sometimes has them!

    Wife mentioned corned beef the other day, and I took that as a hint and bought some! It had been a while since we had some for dinner, but wait; IT is more! Throw it in a bowl and cover with egg and it can be breakfast or brunch, as it was on this occasion.

    Due to a miscommunication wife was browning hamburger thinking of a taco salad dish with pasta. I did a quick loosely structured Google and found "Taco Enchilada Casserole Recipe", by brooklyn farm girl.

    Did not have all ingredients, but man it turned out real good!

    It was very good. Just to be sure, 1/2 hour after I ate and finished my dinner beer, I went back for one more taste. It still tasted very good. Breakfast will be a big serving spoon portion of it, with an over easy egg on top spiced with Siracha.
