I've eaten hogs in NW Florida year round. Make sure meat looks normal. Soak in salted water w/ice, draining the water every day and adding more ice until the water doesn't look bloody (takes around 3 days), process, cook, or freeze.

ok, just curious. i do the same thing with the saltwater and ice, but i go 9 days. the guys i hunt with in texas taught me to do this and it works wonders on the flavor.

I do an ice water soak on the meat 5 days with at least a cup of vinegar added at each water change.

I don't like to drag hogs around. shooting them in the neck or head is key. Some shots are 150 to 200 yards out. I carry a bolt rifle in .270 and a 44 mag. I just picked up a model 20 I may swap out the revolver.
