Those disposable carpet hooks are the way to go. Been using them for years to unzip the skin.

Kershaw Echo. Have had this knife for a lot of years and have dressed out many, many deer with it. Blade is drop point and just the right length. I like the way it fits my hand. All it needs is a touch up on a stone before starting on a deer and it holds edge very well. It is not a high end knife but I would not trade it for a more expensive one. Don't think it is available anymore.
