Removing paint from Rifle

What is the best way to remove a Rattle Can paint job from a AR style rifle?

Is it safe to use on the Polymer stock?

I didn't check that. It didn't bother the H.S Precision stock on the bolt guns I did.

I've read where it can be, with the right frequency, removed in an Ultrasonic Cleaner.

I have found it really depends on what type of paint was used, the cheaper box store enamels come right off with a non stained shop rag soaked in acetone, multiple coats of metal paint with a primer applied to bare metal can be tedious to remove. Just ran into a purple gloss paint that appeared to be some type of metal paint that would not budge with acetone. So had to be sand blast it off and they painted everything. Usually mineral spirits is not so good and you can not use a paint stripper, like any lye based strippers due to them eating up aluminum.
Always use chemical resistant neoprene glove(s) and an eye protection. Solvents like Acetone can penetrate the skin.

I've removed hydro dip off a gun in the past and mineral spirits works great.

Whatever you use make sure there is no plastics on whatever your cleaning.

I've used Citra strip and a tooth brush. Slow but did not damage the poly stock or orginal finish.
