    Daughter sent me this Instant Pot recipe and said it was fantastic. We have not tried it yet but everything she cooks is usually great.


    One Pot Instant Pot Asiago chicken with Mushroom Risotto

    Ingredients

    1 pound thinly cut chicken breast
    1/2 cup flour
    2 cups chicken broth
    1 cup white wine
    2 cloves chopped garlic
    2 cups Arborio rice
    8 oz sliced Bella mushrooms
    2 tbs butter
    1 cup milk
    6 oz Asiago Cheese

    Instructions


    coat raw chicken with flour and set aside.
    Place the Instant pot on saute Add butter, and garlic cook till garlic is translucent but don't burn butter about 1 minute.
    Add mushroom, wine, and broth. Add rice and place chicken on top.
    Close the lid and place on manual high pressure for 10 minutes.
    do a quick release. Stir in milk and Asiago cheese.
    Stir and Serve. I hope you enjoy this as much as we did.

    I to have discovered the insta-pot mine is the 8 Qt size so here is one that I have fixed a few times.

    I de-bone any leftover chicken or turkey and put in the pot usually no more than 2 cups.
    2 small bags saffron rice ( the rice in the golden bag).
    2 small bags frozen english peas and carrots (cheap stuff at Wallyworld)
    top off container with chicken broth ( mine takes two cartons and a can to top it off.
    stir in black pepper and salt to taste ( depends on the meat as to how much sometimes turkey is a little salty) close insta-pot
    non vent it and put it on soup mode and let it do its thing. Makes for some really good soup.

    Larry, I too tried it last night. I was a little disappointed - too bland. I will try it again and modify. I'll put some "more spice Tony Chachere's" on the chicken before cooking and I will add some shallots in with the garlic before going under pressure. Otherwise, I thought it was pretty good. Made a hell of a lot of risotto though.

    I'll pass on to my daughter.

    I'm a Tony's freak myself but didn't add any to this. I used 8 oz of cheese instead of 6 so maybe that made a difference. I was happy anyway.

    Wife had a cabbage she said had to be cooked. As she started to fry it with sesame oil, I reminded her that onion and Hillshire Beef Smoked Sausage go real well with cabbage. It really does; simple, but delicious!

    Dinner last night, and lunch today. This was made with a new store bought base that the wife and I both like better than Zattarans. As I recall, I got it from Walmart Neighborhood Market.

    Ever time I see someone eating seafood I know that’s putting a fisherman to work and he is providing for his family. Most of us take great pride in our trade.

    I definitely prefer them raw, but I tell ya what, at my wedding back in November we had some fried oysters as an appetizer and they were damn fine. Iffin youre6ever at a shindig catered by Classic City, don't pass up the fried oysters.

    My step-dad, the 2nd, did not like oysters; then he tried Oysters Rockkafellow at Fish House. Later, fried oysters at Chets set the hook deep; and he has a whole new food view on oysters going into 80! LOL
