Ray-would you ever consider adopting a person for your family? If so I am available at a very small cost. I can only imagine the joy that'd be in your heart when you saw the smiles break out on my face when I sat down to one of those fine meals you are always making. :hungry:

pulled this together for a snack tonight when I got home from work

A buddy gave me some of his home made creole seasoning so I proceeded to spill a good bit on a few shrimp...almost didn't cook them through :) I hope I remember to tell him how good it is.

Made a garlic ginger reduction in the pan after de-glazing the skillet with a little white wine I cooked the scallops in.

Put them sweet tatter fries in there to hold it all apart.

After too many bland hotel free breakfasts, first morning breakfast back home had to be grits and eggs with sausage and Four State Cheddar! YUM!!

Ray-looks great but I noticed you didn't post your Thanksgiving meal. I was really looking forward to seeing that feast! And I understand about hotel breakfasts. I eat one of them about 250 days a year.

We were visiting out sons and grandkids in N. VA, and had dinner there. I never post from on the road, and the grandkids were the photo subjects, but the kids done good on T-Day dinner!

What did y’all make for thanksgiving? We did stuffing with my wife’s homemade bread, a green bean casserole, a lemon rosemary turkey, homemade mashed potatoes and gravy, and a pumpkin pie. 3C9C0071-C94E-4B05-B96A-EE4D0ACDDD82.jpg

Not a traditional seasonal dinner, but when the wife suggested steak and set out some sirloin; I knew what to do! Seasoned steaks in sous vide precision cooker.

My new searing solution, With ghee at the ready.

Searing skillet worked pretty good I think.

Loaded plate; steak, scalloped cheese potatoes. and Glory collard greans!

I have a couple of questions regarding the sous vide cooking tool. Is it basically poaching in a bag? What kind of temperature range does it have? Any complaints on the one you have? I was eyeballing them a few months ago and put it on the back burner so to speak.

Just to show I have not gone all "sous vide", breakfast made old fashion way with HungryMan Hashbrowns.

Taters re-hydrated and stirred with melted ghee.
