    Been craving some Italian, so I made spaghetti with meatballs. All off the shelve or freezer ingredients, but very tasty and satisfied that craving!

    Did a lot for Thanksgiving this year;

    Breakfast was waffles, sausage, fruit, salmon on a bagel with our own lettuce herbs and eggs

    I went to pick up some odds and ends from the market, and decided to get a rotisserie chicken for dinner. Sunny has been craving some chips and chili cheese dip so I snagged those items needed, then I saw a can of Hormel Tamales. I like tamales, so I grabbed a can. Getting home, I intended to eat the tamales, and then saw a recipe on the can for a Tamale Casserole. Mmmm, cornbread, chili, and tamales…. what is there not to like?

    At home, grabbing a box of corn muffin mix, I found a recipe on it for onion and sour cream cornbread. Wow, use that recipe and throw in some chicken from the rotisserie and make some cornbread dressing. Wait; why not combine the two and make tamale, chicken, chili, onion, and sour cream casserole! BAM, that is the plan.

    While it baked, I shredded the tamales, and added an equal amount of shredded chicken. Mixed them all together and waited on the cornbread.

    Once cornbread was done, I crumbled it up and mixed in the tamale/chicken mix. I added enough chicken stock (made from the drumstick I stripped for some dark meat in the above mix) to get the right consistency for cornbread casserole. I poured the mix in the pan in layers, adding chili and cheese to each layer. Three layers were what I planned. First layer:

    Final product was pretty tasty! I also made the chili/cheese dip the wife was craving. WIN!

    Wife and I had a nice New Years Day dinner; turkey breast with gravy, black eyed peas, and some of the above casserole. No rolls, so I had to toast a piece of bread to sop all the turkey/gravy/pea juice goodness off the plate. Also found a new recipe on the can that sounds like something we would like, with some Sriracha on it.

    Instant Pot arrived last night. Had the usual Black Eyed Peas in the crock pot, and some ham with pineapple and Honey Teriyaki sauce(Sweet Baby Ray's) baked in the oven.

    But christened the Instant Pot with some fresh Turnip Greens. Pretty damn tasty. I think I'm gonna like the Instant Pot. Greens were done in less than 30 minutes with most of that being "Prep Time." Of course I didn't take any pictures, but the Instant Pot's first dish was a success.

    I have this whole fat kid thing going on right now. I became tobacco free in Oct... sept I have been compensating with food...packin on a few myself.

    I decided not to cook rice with mine this year. Instead I chose to put it over the jalapeno conebread I made so there would only be the one starch that I didn't need anyway.

    I can't tell you the last time I cooked collards this good...don't get me wrong they are usually good...just today they are exceptional. Used bacon ends as the meat this time I got from Salt Lick Sausage Co. in both the peas I soaked overnight and the collards I iced and trimmed in the sink this morning.

    I never liked collards, always a turnip greens fan, until one year 25 years ago. On that Thanksgiving I walked into my sister's kitchen and smelled a wonderful smell. Lifted the lid on a pot on the stove and commented on how good the turnip greens looked. I asked who made them. Her MIL, and a true southern country gal, slipped up and took the lid from my hand saying; "these are collards, and pretty good if I say so myself". They were ! And I have never tasted their equal, but developed a taste for collards.

    My brother and oldest son are big Insta Pot fans. I would try one, but after buying an Air Fryer and having it sit in the garage for two years because the wife refuses to use it, I will not take the chance; as I would end up doing ALL the cooking!

    We got an insta-pot Ray and it is pretty amazing. If you want to gift me the air fryer let me know lol!

    We had lomos saltados with pork vice beef, and black-eyed peas with mustard greens from our garden.

    My brother beat you to the air fryer. He mentioned he was thinking of getting one, and I gave him a link to the one I had. He picked it up at a slight discount Christmas time when they were in area for his girlfriends family gathering. He has used it three times and loves it!

    Shrimp For Me

    I absolutely love all seafood,but boiled shrimp is my favorite.
    Just add a bag of Rex's Crab and Shrimp Boil. Don't overcook. When time is up,put in ice water to stop the cooking.
    Serve with some horseraddish sauce. Use enough horseraddish to slightly open your sinuses.

    I am a large shrimp and crawfish fan....I like Louisiana Crawfish, Shrimp and Crab Boil...the loose in the bag one...doctored up a little like G'ma did. I put my horseradish in my ketchup. Don't forget the kone, taters, and Andouille.

    The wife made a pot roast. The moment we finish the first meal out of it, I make it into stew. See, she makes it tough and in stew the meat is pretty soft after a couple of re-heatings. LOL
